Carrot cake fudge

Let's hear it for two kinds of carrot-cake fudge!

Yummy, yummy!
Here's what you need for the creamy version:

3 carrots, peeled, diced, steamed and pureed
sweetener of choice, to taste
1 tsp. vanilla extract
2 tsp. cinnamon
pinch of sea salt
1/2 cup coconut butter
2 T. coconut oil

Here's what you do for the creamy version:

Put all ingredients in a food processor and blend until smooth. Line a mini-loaf pan with parchment paper and spoon in fudge. Place in fridge for several hours to firm. Cut into pieces of desired size. Make your eyes and tummy happy by eating a piece.

Here's what you need for the crunchy version:

1 carrot, grated and steamed until tender
2 T. coconut flakes
1/4 cup coconut butter
1 T. coconut oil
1 tsp. cinnamon
Sweetener of choice, to taste

Here's what you do:

Line a mini-loaf pan with parchment paper. Soften the coconut butter and oil. Mix with carrots, sweetener, cinnamon and coconut flakes. Spoon mixture into mini-loaf pan. Firm up for 30 minutes in fridge. Cut into pieces.

I'm wondering how it would work using raw carrots or carrot pulp from juicing. They sound wonderful!

I think it would work perfectly. I was thinking of using grated raw carrots in the crunchy version to begin with. The carrot pulp should work well too since I'm guessing you have a Vitamix. Let me know how it comes out.

I just made the creamy version of this for the first time last night & had a piece (or 2) with breakfast. It was SO good. I'm just eating lunch at work right now & wishing I'd brought some! Thanks for the great recipe!

You definitely could use all coconut oil but you also might want to consider subbing some seed or nut butter for some of the coconut butter to get a more creamy texture. Let me know how it comes out.

Oh, what a great idea! Using pureed sweet potato, pumpkin or butternut squash would definitely give some creaminess to the fudge.

Wow sheree I haven't made this yet...but my mouth is watering!!
Thanks so much for the inspiration. Well when I first looked at Paleo I thought....gosh that looks tough ..then I checked out AutoImmune Paleo....now guess what I'm exploring FODMAPS Autoimmune....double groan...but I'm going to do it!!!

So for me no coconut butter or seed or nut butters...no sweet potato...but extra coconut oil - yes! Oh I am allowed courgettes (zuchini in american, I think) apparently I can make a cheese using them ...yey.

Sounds like you're in my world. I can't use but sparingly seed or nut butter but no, no sweet potatoes at all. I do enjoy my zucchinis which I am growing in my garden. You definitely could make the carrot cake fudge with coconut oil but you might want to add some pumpkin puree if you can have that.

Good luck with your diet. It is definitely worth it although challenging. I would not be feeling as well as I am without out it.
